Abstract:	本研究以爭鮮股份有限公司的「爭鮮迥轉壽司」的大里店為主例，主要的研究目的有1.了解爭鮮迥轉壽司的經營型態；2.該公司的行銷策略 3.同業競爭的優劣分析 4.作業流程的改善與效益。以觀察的方式及現有的公司歷史進行實務調查與記錄，於2018年9/1~2019年5/1進行研究，並提出研究結果與需改善的問題點: 1.出餐方式的改善較能穩定食材的鮮度與品質，同時不會造成浪費。 2.新進人員的訓練更加確實。 3.提升顧客好感度，同時也是提升企業的好形象。 4.積極做餐前介紹提高新品銷售量。
